What I Had This Week: 5/20-5/27

Unfortunately, I fell behind with posting weekly meal logs but I’m back at it! I mainly started to write down the things I ate to help me when making healthy choices and keep track of the water I drink. The idea was that if I write down everything I have, I’ll be less likely to consume a lot of junk because I’d feel bad rereading the bad stuff I logged afterward. It’s pretty helpful especially since my friend and I trade logs. My biggest goal is to eat a good variety of well balanced meals and get an adequate amount of protein.

Like I said, I began writing my meals down for me, but by posting them on this blog, I hope other people get ideas for things to try and to see that you can eat more than boring salads as a vegan 😉🌱

 Sunday (5/20)

(1 1/2) slice of vegan buffalo pizza (3 Bros in Rockville Centre)

Monday (5/21)

  • Pieces of honey dew melon
  • Multigrain toast with peanut butter

Lunch

Dinner

  • Kale, quinoa, tofu, sweet potato, carrots, and chipotle vinaigrette dressing; side of bread (Just Salad)
  • Orange Paradise juice

Snacks

  • Smartfood Delight popcorn
  • Lenny and Larry’s Complete Chocolate Chip Cookie and a cup of almond milk

Tuesday (5/22)

Friday (5/25)

  • Vermicelli Vietnamese noodles with tofu and peanut sauce

Taco “meat,” jasmine rice, mixed veggies

  • Trader Joe’s apple apricot fruit bar

 Saturday (5/26)

Gluten free waffles with peanut butter

  • Pesto pasta with steamed tofu recipe coming soon
  • (1) Slice of pumpernickel dark pump bread with vegan butter

Dinner

  • 2 brown rice tortilla chips with red beans topped with a little bit of vegan mozzarella cheese, nutritional yeast, and roasted salsa
  • Spinach salad with carrots and cucumber; lemon juice and vinegar dressing

Snacks

  • Small apple
  • Bowl of Gorilla Munch cereal with vanilla almond milk
  • (1) Slice of pumpernickel dark pump bread with vegan butter
  • 1/4 dark chocolate with almonds bar

Sunday (5/27)

  • Burger King French Toast Sticks with syrup
